You’re going to love this simple combo you can repurpose for lunches, dinners and side dishes all week! Because it’s a lettuce-free salad, it doesn’t get all soggy. And it pairs really well with all kinds of proteins and other foods.

? I snapped a photo when I threw it together with store-bought chicken skewers, some basmati rice I meal prepped in advance, and some diced avocado.

Meal prepping does NOT have to be complicated. ? Grab this quick corn salad for your meal prep files!

Quick Corn Salad

(If you grilled corn on the cob on your BBQ then used it in this salad that would be AH-MAZING! But – guess what? – this recipe just needs frozen corn!)

  • 2-3 cups frozen corn

  • 1 red pepper, diced

  • ½ red onion, diced

  • 1 small zucchini, diced

  • 4 scallions, sliced

  • Handful cilantro, finely chopped

  • Juice of 1 lime

  • 1 small clove garlic, grated/pressed

  • 2 tbsp olive or avocado oil

  • Salt & pepper

  • Optional: feta and/or avocado if consuming immediately

  • (Add any leftover half-veggies – most anything will work in this)

1. Add corn to bowl and leave out to thaw while preparing veggies.

2. Dice all veggies approximately corn niblet-sized, as for a chopped salad.

3. In a small bowl, combine lime juice, garlic, olive oil, S & P.

4. Shake corn, veggies and dressing in a covered container. Leave to sit 5 minutes to marinate and thaw.

5. If using, sprinkle feta &/or avocado on before serving.
